Appalachian State University’s Startup Secures $1.8 Million Grant for Sweet Potato Milk Development
Appalachian State University is making strides in the plant-based milk sector through its innovative startup, Rootsii, which has recently received a substantial $1.8 million grant from NCInnovation. This funding aims to explore new applications for surplus sweet potatoes.
Under the leadership of Professor Brent Taubman, the Rootsii team has been dedicated to finding sustainable solutions for the excess sweet potato supply, with the university estimating that over 63 million pounds are wasted annually. Their primary focus has been on creating a sweet potato milk, aligning with the growing demand for plant-based milk alternatives.
Beyond milk, the grant will enable the development of an array of sweet potato-based products including creamers, yogurt, ice cream, and even fermented items like miso and hot sauce. The initiative will also provide significant opportunities for four student researchers from Appalachian State University, who are actively involved in refining these products by examining their nutritional content, flavor, texture, and production yield.
Rootsii plans to bring these innovative products to market within the next two years, potentially transforming the landscape of plant-based food options and contributing to waste reduction efforts.
